Bacon, Egg & Cheese Cups

Ingredients:

6 Bacon strips (canadian bacon or ham)

2 Eggs, whole

10 Egg whites

1/3 cup Onion, chopped

1/3 cup Green pepper, chopped

1/3 cup Sweet potato, chopped

1/4 cup Cottage cheese, drained

1/2 tsp Salt

1/4 tsp Black Pepper


Instructions:

  1. Preheat oven to 425*F/212*C

  2. Lay bacon flat on a baking sheet along side sweet potato and bake for 15 minutes.  Break bacon into small pieces and set aside.

  3. Coat muffin tin with cooking spray.

  4. In a large bowl, whisk eggs and whites with salt and pepper until well combined.

  5. Add remaining ingredients and stir well.

  6. Using a soup ladle, put about 1/3 cup of mixture in each muffin hole of the tin.  

  7. Bake for 20 minutes in the middle of the oven.

  8. Cool for 5 minutes before removing from tin.  Remove from tin and place on a rack to finish cooling or eat while they're hot.
