Baked Sweet Potato Fries

Baked Sweet Potato Fries

Ingredients:

2 lbs Sweet potato, cut into 1 cm thick 'fries'

2 tsp Olive oil

1 tsp Salt

1/2 tsp Paprika

1/2 tsp Garlic Powder

1/2 tsp Parsley, dried (1 tbsp fresh)

1 tsp Baking Powder

Instructions:

  1. Preheat oven to 420*F/215*C.

  2. Line a baking sheet with parchment paper or foil.

  3. In a small bowl, mix together the salt, baking powder, paprika and parsley.

  4. In a large bowl, coat the sweet potato 'fries' with olive oil.  Toss well to coat each piece.

  5. Sprikle all of the seasoning mixture on the fries and toss well to coat.

  6. Lay each piece on the baking sheet, well spaced out.  If they are too close, they will steam and not crisp up on the outside.

  7. Bake for 25 minutes on the top third of the oven.
