Basil Cashew Pesto

Sauce/Dressing

Vegetarian

Ingredients:

3 cups Fresh Basil, lightly chopped

1/4 cup Parmesan, grated

1 tsp Salt

2  Garlic cloves, minced

2 tbsp Cashews

2 tbsp Olive oil

3 tbsp Lemon juice

1/4 cup Water

Instructions:

  1. Put all the ingredients into a food processor or blender and grind until combined into a paste.

**I chop the basil and garlic and grind the cashews in advance because my blender is not very strong.  But if you have a high speed mixer, you can just throw it all in whole and the machine will do the work for you.**

Substitutions:

Parmesan: Romano or any hard cheese. If you are dairy free, substitute bread crumbs.
Cashews: any nut you like or omit entirely if you are nut free
Olive oil: any plant based oil
