
Blackened Red Snapper

Ingredients:
3 oz Red Snapper
1/2 cup Mango Salsa
2 tbsp Avocado, diced
Blackening Seasoning:
1/2 tsp Chili Powder
1/4 tsp Cayenne
1/2 tsp Thyme, dried
1/2 tsp Salt
1/2 tsp Garlic powder
1/2 tsp Oregano
1/4 tsp Black pepper
Lemon/lime for serving
Parsley/cilantro for garnish
Instructions:
Preheat oven to 400*F/205*C. Line a small baking sheet with foil or parchment paper and lightly coat with cooking spray.
In a small bowl, mix ingredients for blackening spice.
In a separate bowl, mix mango salsa and avocado. Set aside.
Dry fish thoroughly and cover on all sides with blackening spice.
Bake fish for 10 minutes. Remove and let rest for 2-3 minutes...fish will continue cooking with residual heat.
Serve fish with mango salsa and a fresh squeeze of lime or lemon. Garnish with fresh parsley or cilantro.
