Blackened Red Snapper

Ingredients:

3 oz Red Snapper

1/2 cup Mango Salsa

2 tbsp Avocado, diced


Blackening Seasoning:

1/2 tsp Chili Powder

1/4 tsp Cayenne

1/2 tsp Thyme, dried

1/2 tsp Salt

1/2 tsp Garlic powder

1/2 tsp Oregano

1/4 tsp Black pepper


Lemon/lime for serving

Parsley/cilantro for garnish


Instructions:

  1. Preheat oven to 400*F/205*C.  Line a small baking sheet with foil or parchment paper and lightly coat with cooking spray.

  2. In a small bowl, mix ingredients for blackening spice.

  3. In a separate bowl, mix mango salsa and avocado.  Set aside.

  4. Dry fish thoroughly and cover on all sides with blackening spice.

  5. Bake fish for 10 minutes.  Remove and let rest for 2-3 minutes...fish will continue cooking with residual heat.

  6. Serve fish with mango salsa and a fresh squeeze of lime or lemon.  Garnish with fresh parsley or cilantro.
