
Calamari Pad Thai

Ingredients:
1 Carrot, julienned
1 Green pepper, sliced
1 Onion, sliced
1 Garlic clove, minced
3/4 cup Cabbage, shredded
5.5 oz Calamari
1 Egg
175g Rice Noodles (about one cup)
1.5 tbsp Canola oil
1/4 cup Thai Peanut Sauce
Cilantro for garnish
Scallions for garnish
Instructions:
Make sure to have all ingredients ready to go because this dish moves fast once you get started.
Put rice noodles into a bowl and cover with boiling water. Let sit about 10 minutes, drain and set aside.
Over high heat, add 1 tbsp oil to skillet or wok. Immediately add carrot and onion. Cook about 1-2 minutes until they begin to soften.
Add green pepper, cabbage and garlic. Cook an additional 1-2 minutes, continually stirring/tossing the vegetables to prevent browning.
Move vegetables to mixing bowl and set aside.
Add remaining oil to pan and add calamari, tossing to coat.move the calamari to one side of the pan and crack the egg in the other. Scramble the egg while the calamari cooks, about a minute.
Return vegetables to the pan with the egg and calamari. Also add the noodles and sauce. Mix until coated in the sauce and serve.
Garnish with chopped scallions and cilantro.
Substitutions:
Calamari: shrimp, chicken, pork, beef Any protein, but seafood is lower in calories.
Canola oil: Avocado oil, coconut oil, sunflower oil
