Chicken Pesto Pizza

Ingredients:

1 Pizza Crust

6 oz Chicken breast, poached and shredded

1/2 Red onion, sliced

1 Roma tomato, quartered and sliced

3 oz Mozzarella Cheese (part skim), diced

1/2 cup Cottage Cheese, lowfat

1/2 cup Kale, shredded

2 servings Basil Cashew Pesto (approx 2.5 tablespoons)

1/2 tsp salt

Instructions:

  1. Pre-bake pizza crust according to instructions.  Oven should be on 204*C/400*F.

  2. In small bowl, add cottage cheese and pesto and mix to combine.  Reserve 1/3.

  3. Spread 2/3 of the pesto-cheese mixture on the crust as the 'sauce'.

  4. Layer chicken and sprinkle with salt.

  5. Layer red onions, tomato and kale on top of chicken.

  6. Add mozzarella on top.

  7. Dot remaining pesto-cheese mixture over the top.

  8. Bake for 20 minutes.

  9. Enjoy!
