Okonomiyaki

Ingredients:

1.5 cup Cabbage, shredded

1/2 cup Carrot, grated

1/4 cup Green onion, chopped

2 tbsp Cilantro, chopped

1/2 cup All purpose flour

2 eggs

1 tbsp soy

1/3 cup Stock (Vegetable or chicken, or water)

1/2 tsp Baking powder

Pinch Salt

1/2 tsp Sesame Oil

4 tsp Olive oil

Plain greek yogurt: for garnish

BBQ sauce: for garnish

Cilantro & green onion: for garnish

Sesame seeds: for garnish

Instructions:

** You can use any vegetables in this recipe as long as they are grated.  Just make sure at least 1 cup is cabbage**

**This will make 4 medium pancakes.**


  1. In medium bowl, mix flour, salt and baking powder.

  2. In separate bowl, mix stock, eggs, soy sauce and sesame oil until blended.

  3. Whisk the liquid mixture into the flour mixture until incorporated.  It will look like pancake batter.

  4. Add shredded vegetables and stir until they are all coated in the batter.  

  5. Heat a small skillet on medium heat and add 1 tsp olive oil and swirl to coat the bottom of the pan.

  6. Measure out 3/4 cup of batter and pour into the skillet.  Spread it out in one layer if necessary.

  7. Cook about 3-4 minutes until lightly golden and flip over to cook the other side.

  8. Drizzle about 1 tbsp each of yogurt and bbq sauce over the pancake.

  9. Top with green onion and cilantro.

Substitutions:

Use any vegetables you like, but make sure at least 1 cup is shredded cabbage.
If you want to add meat, cook and cool the meat first and fold it into the batter in Step 4. Ground beef and shredded chicken would work well in this, but use whatever you want.
