Pumpkin Soup

Ingredients:

2 cups Pumpkin, mashed

1 Red onion, diced

2 cloves Garlic

1 cup Broth (Vegetable or chicken)

1/4 tsp Salt

2 tbsp Pumpkin seeds for garnish **included within calorie estimate

Chives for garnish


Instructions:

** Step 1 is optional.  If using canned pumpkin, skip to step 2**

  1. On a parchment lined paking sheet, place  half a pumpkin cut side down.  Cut onion into quarters and add to baking sheet with pumpkin and garlic.  No oil necessary if using parchment paper.  Roast at 400*F or 205*C for about an hour.  Check the garlic and onion after 30 minutes and remove if it is soft.  Do not burn onion and garlic.  

  2. Add broth, onion and garlic to saucepan and bring to a boil.  Cover and cook for 5 minutes until onion and garlic is softened.  

  3. Mix in pumpkin and warm through, about 3-5 minutes.  

  4. Trasfer mixture to blender and puree until smooth.  Salt to taste.

  5. Garnish with pumpkin seeds and chives.

**Optional: If you like it a bit sweet, try adding a tablespoon of maple syrup and a pinch of cinnamon and nutmeg while blending.
