
Quinoa 'Fried rice"

Ingredients:
1/2 cup Quinoa, uncooked
1 cup Water
1/2 tsp Salt
1 tsp Olive oil
1/4 cup Green Peas
1/4 cup Sweet Corn
1/4 cup Carrots, chopped
1/4 cup Green Pepper, chopped
1/4 cup Red Onion, chopped
1/4 cup Cabbage, chopped
1 Garlic clove, minced
1 tbsp Ginger, minced
1/8 tsp White Pepper
Red chili flakes to taste
Cilantro, basil and green onion for garnish
1 cup Peanut Sauce
Instructions:
Add quinoa, water and 1/4 tsp salt to saucepan. Cover and bring to a boil.
Once it boils, reduce to simmer and cook for 15 minutes.
Remove saucepan from heat and leave covered for an additional 15 minutes.
In a skillet over medium high heat, add olive oil. To skillet add all the vegetables together: peas, corn carrots, cabbage, green pepper and onion with 1/4 tsp salt.
Saute for 5-7 minutes until slightly softened.
Add ginger and garlic. Cook 5 minutes more. Add chili flakes to taste.
Mix vegetables into cooked quinoa and add 1/2 cup of peanut sauce. Stir thoroughly to combine.
Serve with Chicken Meatballs and drizzle with remaining peanut sauce to serve and garnish with cilantro, basil and green onion.
