Ingredients:

1/2 cup Quinoa, cooked and cooled

1/4 cup Parsley, chopped

1 tbsp Fresh Mint, chopped

1/2 tsp Salt

1/2 tsp Lemon juice

1/2 tsp Olive oil

Instructions:

  1. Mix together until combined.  

  2. Add more lemon juice or olive oil to taste.

Substitutions:

1 tbsp Fresh Mint: 1 tsp dried mint
Quinoa: Bulgur wheat, lentils, wheat berries
