Ingredients:

1 cup White Rice, cooked and cooled

1/4 cup Carrots, grated (large)

1/4 cup Celery, chopped

1/4 cup Cucumber, chopped & seeded

1/4 cup Cabbage, chopped

1/4 cup Parsley, chopped

2 Roma Tomato, seeded and diced

1/2 Red onion, diced

2 tbsp Dried Cranberries, roughly chopped if large

2 tbsp Walnuts, chopped

1/4 cup Dijon Vinaigrette



Instructions:

  1.  Mix all ingredients in a bowl and toss.

Substitutions:

White rice: Brown rice
