Sausage with Cabbage and Apples

300 calories per serving

Chicken

Ingredients:

4 Chicken sausage links, 4 inches each (approximately 5 oz total)

2 cubs Cabbage, chopped

1.5 cups Leeks, sliced

1 Gala apple, sliced

2 tsp Ghee

1/2 tsp Salt

1/4 tsp Thyme

1/8 tsp Sage

3/4 cup Broth (Chicken or vegetable)

1 tsp Apple cider vinegar

*Parsley for garnish


Serve with mustard sauce:

1 tbsp nonfat greek yogurt mixed with 2 tbsp Dijon Vinaigrette

Instructions:

  1. Melt 1 tsp of ghee in a skillet over medium heat.  Add whole sausages and brown, turning often for even coverage.  Remove sausages and set aside.

  2. Add remaining tsp of ghee to skillet with leeks.  Saute leeks for abut 5 minutes until they become soft.

  3. Add cabbage, salt, thyme and sage to pan with leeks and stir to combine.  Let cook about 5 minutes until cabbage begins to wilt.

  4. Add broth and vinegar to pan and cover with lid.  Reduce heat to medium-low and cook for 5-10 minutes until liquid is reduced by half.

  5. Add apples and return chicken sausage to pan.  Cook uncovered for another 5 minutes while apples soften slightly and sausage warms through.

  6. Serve with parsley and mustard sauce (recipe above).

Substitutions:

Chicken sausage: any other sausage although calorie counts will change
Leeks: onion
Chicken broth: vegetable broth
