Ingredients:
2 Eggs
1/2 cup Tomato Sauce
1 Garlic clove, minced
1/2 Green pepper, chopped
1/2 Red Onion, chopped
1 Roma tomato, seeded and diced
1 tsp Olive oil
Salt & pepper
1 tbsp Cottage cheese, drained
**Cilantro for garnish
**Serve with Whole Wheat Tortillas
Instructions:
Heat oven to 350*F/175*C.
Put a small oven safe skillet over medium heat and add olive oil.
Add onion and green pepper to skillet and saute for 3-4 minutes until softened.
Add garlic to skillet and stir until fragrant, about 1 minute.
Add tomatoes and a pinch of salt and pepper to taste. Cook until tomatoes soften slightly.
Add tomato sauce and bring to a simmer. Remove from heat.
Make two small wells in the tomato mixture and crack the eggs into the wells.
Place skillet into oven and bake for 10 minutes. Eggs should be opaque and yolks should still be runny. **Be sure to remove from the oven just before you think it's done as the eggs will continue cooking**
Garnish with cheese and cilantro.
**Delicious served with whole wheat tortillas and fresh avocado**
