Skinny Caesar Dressing

Skinny Caesar Dressing

Sauce/Dressing

Vegetarian

Ingredients:

1/2 cup Plain nonfat Greek yogurt

1 tbsp Lemon juice

1 tsp Anchovy paste

1 tsp Worcestershire sauce

1 Garlic clove, grated

3 tbsp Parmesan, finely grated

1 tsp Dijon mustard

1/4 tsp Salt

1/8 tsp Black Pepper

1 tbsp Water*

Pinch Stevia*

Instructions:

  1. Mix all ingredients in a jar until well combined.  Can also use a food processor or blender but I found it not necessary.

  2. The water is there to thin out the dressing.  Mine was quite thick, so add more or less as you like. 

  3. The stevia is also there as a personal choice.  This dressing is tart from the lemon juice and I like it that way, but a pinch of stevia will round out the sharpness of the acid.


Substitutions:

Stevia: honey, maple syrup
Parmesan: Romano, Grana Padano, Asiago
