Snapper Ceviche

Snapper Ceviche

Ingredients:

3 oz Red Snapper, cubed

1 tbsp Red Onion, sliced

2 tbsp Mango, diced

2 tbsp Avocado, diced

1 tbsp Red Pepper, diced

1/4 cup lime juice

2 tsp Olive Oil

Salt 

* optional* Red Pepper Flakes 

Cilantro, for garnish

Instructions:

  1.  Place cubed red snapper in bowl with lime juice and pinch of salt.  Stir to combine and refrigerate for 1 hour.  **The acid in the lime juice 'cooks' the fish.  You will notice it turns opaque white**

  2.  Remove the bowl from the refrigerator and mix in the remaining ingredients.  Toss gently and season with salt and red pepper flakes.

Substitutions:

Snapper: shrimp, seabass, rockfish, sole
Mango: Pineapple, papaya
