Spinach Artichoke Dip (No Bake)

Ingredients:

2 cups Swiss Chard, chopped

2 tbsp onion, chopped

1 clove Garlic, minced

1 tsp Ghee

1/2 cup Artichoke hearts, chopped

1/4 tsp Salt

1/2 oz Parmesan, grated fine

1 oz Mozzarella, diced

1/2 cup Greek yogurt

1/8 tsp White pepper

Red pepper flakes - optional

Instructions:

  1. In pan over medium heat, melt ghee and add onions.  Cook until translucent.

  2. Add spinach to onions in pan, salt lightly and cook until wilted.  Drain mixture in cheesecloth by squeezing out all excess liquid.  Return to pan.

  3. Add garlic  to strained spinach mixture and cook one minute until fragrant.

  4. Stir in yogurt and mix to combine.

  5. Add mozarella, parmesan and white pepper.  Continue to cook over medium heat until cheese is melted.

  6. Stir in artichokes gently until incorporated.

  7. Serve and garnish with red pepper flakes, if desired.

Substitutions:

Swiss chard: Spinach, mustard greens, kale, any leafy green
Mozzarella: Paneer, feta, ricotta, cottage cheese, cream cheese
Parmesan: Romano
Ghee: Butter, olive oil, avocado oil, coconut oil
