Split Pea Soup with Bacon

Ingredients:

5 oz Lean Bacon (125g), cut into small pieces

1 tsp Olive Oil

1/3 cup Onion, chopped

1/3 cup Carrot, chopped

1/3 cup Green Pepper, chopped

1 Garlic clove, sliced

1 tsp Thyme, dried

2 Bay leaves

1 cup Split Peas (200g)

4 cups Chicken Broth

1/4 tsp Salt

Instructions:

**Soup can be made vegan by substituting vegetable stock and omitting the bacon**

  1. In large saucepan add olive oil and bacon.  Turn on heat to medium-low.  **By turning on heat after bacon is in the pot, it allows the fat to render slowly as the pan comes up to temperature.**

  2. Cook bacon about 10 minutes until most of the fat is rendered but it is still soft.

  3. Increase heat to medium-high and add onion, carrot, green pepper, garlic, salt and thyme.  Cook for 5 minutes.

  4. Add 1/2 cup broth and scrape browned bits from the bottom of the pan to incorporate.  

  5. Add remaining broth, peas and bay leaves.

  6. Cover and bring to a boil.

  7. Reduce heat and simmer for 1 hour.


Substitutions:

Chicken broth: vegetable broth
Bacon: canadian bacon or ham.
Dried thyme: 1 tbsp Fresh thyme
