Ingredients:
5 oz Boneless skinless chicken breast (approx 1 breast)
3 cups chicken broth
1 stalk lemongrass, smashed
1/4 cup Onion, thinly sliced
1 tbsp Ginger, smashed (approx 1 inch piece)
1 tbsp Fish sauce
1 tsp Soy sauce
1 tsp Curry paste
1/4 cup Coconut milk
1 Red pepper, sliced (I used seeded tomato because I didn't have red pepper)
1 Garlic clove, smashed
Green onions for garnish
Cilantro for garnish
Avocado for garnish*
Chili flakes to taste

Instructions:
Bring chicken stock and smashed lemongrass, ginger and garlic to a boil.
Reduce to a simmer and add chicken breast to pot. Poach about 10 minutes. Remove and cool slightly.
When cool enough to handle, pull apart chicken into bite size pieces.
Add curry paste, coconut milk, soy sauce and fish sauce to broth. Return to simmer.
Return chicken to pot and add sliced onion and red pepper. Cook for about 3 minutes until warmed through.
Serve with cilantro, sliced green onions and avocado. Sprinkle red pepper flakes if you like it spicy.
