Tomato Sauce

Tomato Sauce

Vegetarian

Ingredients:

1.5 lb Cherry Tomatoes

1 tbsp Ghee

1 Onion, quartered

2 Garlic cloves, lightly smashed

1 tsp Salt

Instructions:

  1. Put a saucepan over medium-high heat and add the ghee followed by the rest of the ingredients.

  2. Cover tightly with a lid and leave it alone for 10 minutes.  **You may need to add 2 tbsp of water to get it started, but only if absolutely necessary**

  3. Stir the tomatoes with a spoon to check and see if any have burst.  Once they begin to burst, reduce the heat to low and return the lid and cover tightly.  

  4. Check and stir every 15 minutes so that all the tomatoes burst and release their juices.

  5. Continue to cook until the onion and garlic are soft, checking every 10 minutes.

  6. Puree until smooth in a blender or food processor.

  7. Sieve out the seeds and what remains is the tomato sauce.

**This sauce is perfect for soup, as the base for spaghetti or pizza sauce, use in chutneys, stews and curries.  It's super with eggs in shakshuka.**

Substitutions:

Ghee: butter. olive oil
