Tuna Stuffed Tomatoes

Ingredients:

6 Roma tomatoes

1 can Tuna (185g in brine, 130g strained)

1/4 cup Strained nonfat Greek yogurt

1 tsp Yellow mustard

1 tsp Worcestershire sauce

1 tbsp Red onion, minced

1 tbsp Celery, minced

1 tbsp Cucumber, minced

1 tbsp Parsley, chopped

Salt & pepper 


Instructions:

  1. Strain tuna of all liquid.

  2. Cut tomatoes in half and scoop out the insides leaving the outside intact.  **You might want to slice a tiny bit off the bottom so they stand up straight on their own**

  3. In a medium bowl, mix chopped herbs and vegetables with yogurt, mustard and worcestershire sauce until smooth.

  4. Add drained tuna and mix until combined.

  5. Fill tomatoes with tuna salad.

  6. Garnish with cracked black pepper

**Optional** Drizzle with dijon vinaigrette. /recipes/dijon-vinaigrette
