White Chocolate Garbanzo Cookies

Ingredients:

7.5 oz Chick peas (Garbanzo beans) - approximately 1.25 cups or 1/2 a can

1/8 tsp Salt

2 Bananas, mashed - about 3/4 cup

1/2 cup Rolled Oats

2 tbsp Coconut Oil

1 tbsp Tahini

2 tbsp Honey

1 tsp Vanilla

2 oz White Chocolate chips **optional, but included in calorie estimate**

Instructions:

  1. Preheat oven to 375*F/190*C.

  2. Mash chick peas into a fine paste.  Can be done well using a food processor.

  3. Add bananas, salt, oil, tahini, honey and vanilla.  Mix well.

  4. Stir in oats and 1/2 of the white chocolate chips.

  5. Reserve the remaining white chocolate chips for topping cookies before baking.

  6. Spoon tablespoons of dough onto parchment lined baking sheet.  

  7. Flatten dough on parchment and top each cookie with a few white chocolate chips.

  8. Bake for 25 minutes and cool on baking sheet for 5 minutes before moving to cooling rack.

Substitutions:

Garbanzo beans: Cannellini beans, navy beans, white beans
Coconut oil: Avocado oil, canola oil, vegetable oil
Tahini: if omitting tahini, increase oil by 1 tbsp
Honey: Maple syrup (for Vegan substitution)
