Yellow Tomato Coulis

Sauce/Dressing

Vegan

Ingredients:

1 cup Whole yellow tomatoes

1/4 cup Onion, diced (yellow or white onion)

1 Garlic clove, smashed

1 tsp Olive oil or butter

Salt

Instructions:

  1. Heat oil in small saucepan on medium-high heat.  Add onion and cook for 3-5 minutes until translucent.  

  2. Add smashed garlic and a pinch of salt and stir until fragrant. 

  3. Add the tomatoes and stir to coat.  Cover and cook for 10 minutes until they burst.

  4. Transfer contents of saucepan to blender or food processor and blitz until smooth.

  5. **optional, but recommended**  Sieve yellow tomato puree through fine mesh strainer to remove seeds and solids.

Substitutions:

Yellow tomato: Roma tomato or tomatillo
